COCONUT FLOUR PANCAKES


Yield: Makes 8-10 – small pancakes
Serving Size: Serves 1-2 people
Ingredients
•             2 tbsp extra virgin coconut oil
•             1 tbsp raw honey
•             3 large eggs
•             1/4 cup coconut milk
•             1/2 tsp vanilla extract
•             1/4 cup coconut flour, sifted
•             1/4 tsp cream of tartar
•             1/8 tsp baking soda
•             1/8 tsp sea salt
Instructions
1.            Cream together the coconut oil and honey. Add the eggs one at a time.
2.            Add coconut milk and vanilla. Mix until smooth.
3.            Add coconut flour. Mix until smooth.
4.            Lastly add cream of tartar, baking soda and salt.
5.            Do not overmix. Overmixing will result in the baking agents (cream of tartar & baking soda) not working.
6.            Use a laddle and pour small amount of batter into a crepe pan with ghee/butter etc on medium heat.
7.            Flip once the bottom is light brown. The pancakes will not bubble as much as “regular” pancakes.
8.            Serve immediately with a drizzle of maple syrup.

Paleo Porridge Menu

Porridge is a nice way to start the day because it is warm, a little bit sweet, and it stays with you through the entire morning. But if you are following a traditional porridge recipe you won’t get too far while on Paleo. All of the necessary modifications have been made in this version so you can enjoy it without worrying if you are staying within the guidelines. Eggs, flour, coconut milk, and seasonings have combined to make one yummy porridge. This can serve as a standalone breakfast without any meat eaten at the same time. Paleo does focus on a meat and vegetable balance, but breakfast can be a lighter meal.


What you need:
·         2 eggs
·         1 tablespoon coconut flour
·         0.5 cup (1 dl) coconut milk (preferably extra creamy)
·         1 pinch salt
·         seasoning of choice (I usually go for maybe half a tsp of ground vanilla pods…a little bit cardamom is nice too)
What to do:
1              Put everything in a small pot and mix it well.
2              Run over low heat while stirring until preferred texture.

Paleo Pumpkin Granola Recipes

If you like to start your day with granola, most other versions you see on store shelves will not be approved on the Paleo diet. You’ll need construct your own granola recipe using Paleo foods such as nuts, seeds, dried fruits, and spices like cinnamon, and pumpkin spice. This gives you the ability to customize the granola according to your own taste as well as make sure you are only using high quality ingredients. You’ll want to avoid eating it with yogurt as well, as that’s a dairy product. Try it with almond milk as a delicious and nutritious substitute that’s dairy free.

Ingredients
•             1 cup almond meal
•             1½ cup sliced almonds
•             1½ cup coconut flakes, coarsely chopped
•             1 cup pumpkin seeds
•             1 cup pecans, chopped
•             1 cup dried cranberries
•             ½ cup Medjool dates, coarsely chopped
•             ½ cup coconut oil
•             2 Tbsp maple syrup (optional)
•             ½ cup pumpkin puree
•             1 tsp pumpkin pie spice
•             1 tsp cinnamon
Instructions
1.            Preheat the oven to 275 F and line a baking sheet with parchment paper.
2.            In a very large bowl combine coconut flakes, almond flour, dates, cranberries, pumpkin seeds, sliced almonds and pecans.
3.            In a small bowl, combine the pumpkin, coconut oil, maple syrup (if you're using), pumpkin pie spice and cinnamon.
4.            Add the wet ingredients to a dry ingredients and stir until dry ingredients are thoroughly coated.
5.            Spread the granola in a thin layer on the baking sheet.

6.            Cook for one hour, stirring every 15 minutes to prevent burning.
